Energetically self-sufficient, authentic, deeply rooted. At OLM Nature Escape, everything is part of a cycle – nature, people, architecture. Their philosophy is mirrored in the shape of the building: a circle made of wood, stone and glass reminiscent of a traditional millstone that blends seamlessly into its surroundings.

This connection to nature is also reflected in OLM’s kitchen concept, where culinary director Berni Aichner delights in combining regional dishes and home-made delicacies with Mediterranean influences and international inspirations.

We were closely involved in the OLM project in both an advisory and a planning capacity. The focus was particularly on an open-plan kitchen, which allows guests to be fully immersed in the culinary experience. Complementing this layout, the stylishly integrated Modbar adds an elegant touch to the surroundings. We also went to great lengths to carefully optimise back-of-house (BOH) processes in order to ensure efficient operations with the most streamlined staff deployment possible.
